Job Description

The Line Cook works under the direction of the Sous Chef and the Food & Beverage Supervisor to prepare high-quality menu items for guests. This position requires strong culinary skills, attention to detail, and strict adherence to food safety, sanitation standards, and departmental policies.

The following include, but are not limited to essential functions of the position.

  • Sets up and stocks workstation before service.
  • Prepares, cooks menu items in accordance with standardized recipes and property specifications.
  • Maintains sufficient product levels on the line based on business volume, menu mix, and offerings throughout shift.
  • Portion plate and release food orders promptly and accurately to support timely service.
  • Prepare a wide variety of hot and cold food items including meats, seafood, poultry, vegetables, sauces, and other items as assigned.
  • Ensure that all food meets company standards for quality temperature, taste, and presentation.
  • Adheres to proper storage and rotation procedures ensuring food freshness and minimizing spoilage and waste.
  • Maintain a clean and sanitary workstation area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners convection ovens, flat top range, and refrigeration equipment.
  • Properly follow kitchen closing checklist, assisting other kitchen staff as needed.
  • Maintains strict adherence to Health Code Standards and Sanitation Policies.
  • Ensures compliance with all regulations, laws, and standards.
  • Assists other kitchen staff and proactively supports smooth and efficient operation of the restaurant and kitchen.
  • Complies with all regulations including Food Safety, IGRA, Tribal-State Compact, Tribal Gaming Ordinance, Tribal Gaming Regulations, FinCEN requirements and Warm Springs Gaming Enterprise Internal Controls.
  • Performs other duties as assigned.

  • Culinary Expertise: Demonstrates proficiency in food preparation, cooking techniques, and recipe adherence to maintain consistency and high-quality dishes in a fast-paced casino restaurant environment.
  • Time Management: Works quickly and accurately under pressure, managing multiple orders simultaneously while ensuring food safety, cleanliness, and timely service to meet guest expectations.
  • Teamwork: Collaborates effectively with kitchen staff, servers, and management to ensure smooth operations, addressing challenges proactively and maintaining a positive and professional work environment.

Minimum Qualifications

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.   • Prior full-service kitchen experience a plus.
  • Strong understanding of cooking techniques, ingredients, equipment and food safety practices.
  • Thorough knowledge of food safety guidelines and Health Code sanitation regulations.
  • Must be able to work flexible hours including nights, weekends and holidays.

Preferred Qualifications

  • High School Diploma or equivalent.
  • One (1) year of professional kitchen/cooking experience, including experience on a hot line and grill.
  • One (1) year of culinary education.

Certification(s) and/or Licenses Required

  • Must maintain a valid Oregon driver’s license.
  • Must be 21 years of age or older.
  • Must submit to and pass a drug/alcohol screening test.
  • Must submit to and pass an Oregon State background investigation.
  • Food Handlers Certification.

High Risk – Job requires standing/sitting for long periods of time. This can be physically demanding, so comfort strategies, such as supportive footwear, are important. This job also requires repetitive motions, which can lead to repetitive stress if not managed properly. The atmosphere is high energy, with bright lights, music, and ongoing activity creating a lively setting with high noise levels and cigarette smoke.

  • Lifting and carrying is required. Lifting items weighing as much as 60 pounds may be required.
  • Requires standing long periods of time.
  • This position requires reaching, manipulating, standing, stooping, bending and walking.
  • This position requires intense and exacting mental and visual attention.
