Job Description
POSITION SUMMARY:
Our Food Service Fellowship is meant to nurture raw skills and develop those skills to be taken into professional word. A personalized plan will be developed to identify focal areas for your program. This involves working closely with the Food Service Director, Executive Chef, and Sous Chef to learn culinary techniques, team management, menu building, stocking, product turnover, pricing and ordering within the Food & Beverage industry.

ESSENTIAL FUNCTIONS:
- Fellowship will consist of some or all of the following rotations; Conference/Wedding catering, CCO operations, large scale buffet style in our Commons dining hall, quick service in our Buckboard Grill, FOH operations of all previously stated outlets.
- Understand to the full operation of each rotation in your fellowship program by the conclusion of the specified timeframe.
- Work closely with the outlet chef/manager to develop tools such as menus, schedules, orders, inventory sheets, etc. Understand how and why these tools are developed.
- Direct aspects of food production during shift, such as ordering, storage, preparation, cleaning, portion control, inventory and record keeping while ensuring culinary excellence at all times.
- Execute planned meals to the specification of the Food Service Director and Executive Chef.
- Plan delicious and nutritious meals to ensure the best utilization of the facilities and staff to meet customer needs.
- Maintain a hygienic, neat, clean, professional appearance and presentation at all times.
- Work holidays, weekends, and morning or evening shifts.
- Be timely and dependable for scheduled shifts.
- Basic food preparation and sanitation knowledge.
REQUIREMENTS/QUALIFICATIONS:
- SERV Safe Certification or program completion within 3 months of hire.
- Have operational knowledge of a wide variety of F.S. equipment including, computers, dish machine, broiler, steamer, ovens, slicer, tilt skillet, etc.
- Ability/qualifications to work in other kitchen areas as needed.
- Be fluent in written and oral English.
- Admirable time management and organizational skills.
- Excellent critical thinking and problem-solving skills.
