Le Perroquet
Le Perroquet is an all-day French brasserie from Michelin-starred Chef Daniel Rose, offering classic French dishes crafted with seasonality, technique and a sense of occasion in the heart of Mayfair. It will open at The St. Regis London, Mayfair’s newest luxury destination, located at the corner of Conduit and New Bond Street.
As a Night Chef de Partie, you will take ownership of the kitchen operations during the overnight shift, ensuring the preparation and delivery of high-quality food for in-room dining, overnight guest requests and early-morning operations. Working independently and as part of the wider culinary team, you will maintain exceptional standards of food quality, presentation, hygiene and organisation while ensuring the kitchen is fully prepared for the day ahead.
Key Responsibilities
- Proven experience as a Chef de Partie within a luxury hotel, fine dining or high-quality restaurant environment.
- Strong culinary skills and knowledge of kitchen operations.
- The ability to work independently and make sound decisions during overnight shifts.
- Excellent organisational and time-management skills.
- Strong knowledge of food safety and hygiene standards (HACCP).
- The ability to maintain high standards under pressure.
- Excellent communication and teamwork skills.
- A positive attitude and commitment to delivering exceptional quality.
- Flexibility to work overnight shifts

- Proven experience as a Chef de Partie within a hotel, staff dining, banqueting or large-volume catering environment.
- Strong knowledge of food preparation, kitchen operations and menu planning.
- Experience preparing meals for large groups while maintaining quality and consistency.
- Good understanding of nutrition and balanced meal preparation.
- Knowledge of food safety and hygiene standards (HACCP).
- Excellent organisational and time-management skills.
- Ability to work efficiently in a fast-paced environment.
- Strong communication and teamwork skills.
- A positive, professional and proactive approach.
