Key Responsibilities
- Always carries out production in assigned area/station according to Company portion control guidelines, recipes, and passenger demand.
- Properly supervises and coaches staff in the assigned station, ensuring product quality and consistency by always requiring adherence to correct production methods, portion control guidelines, Company recipes, defrosting schedule, and cutting and trimming methods, as instructed by the Chief Butcher / Chef de Partie Butcher.
- Always adheres to the daily production schedule as required by the itinerary and various outlets, under the direction of the Chief Butcher / Chef de Partie Butcher.
- Always assists with loading and storing as scheduled.
- Routinely and correctly rotates products into and out of the defrosting cycle, as directed by the Chief Butcher / Chef de Partie Butcher.
- Develops an understanding of major proteins consumption by group required for daily production; promptly informs Chef de Partie Butcher / Chief Butcher of anomalies or unusual trends.
- Continually trains staff in and always ensure compliance with Company, safety, environmental, USPHS and Fleet Regulations, and other internal, external, and governmental regulations as directed.
Skills, Knowledge & Expertise
- Must have completed basic training in Butchery production in a large hotel or cruise ship environment Must have at least three years of experience in the Butchery with at least one year experience as 1st Commis Butcher
- Must have recent experience in high volume operation and strong knowledge of Butchery production Must possess the ability to train subordinate crew members
- Must be well versed in USPHS regulations with the ability to explain concepts
- Command of the English language, both verbal and written
