Job Description
Position Summary:
The Steakhouse Assistant Room Manager will assist in providing strategic leadership and direction to ensure Team Members in the restaurant achieve individual and department goals and contribute to overall profitability of Thunder Valley Casino Resort while maintaining AAA Four Diamond standards of Guest service. The Assistant Room Manager will assist the Room Manager in maintaining the efficient and profitable operations of the restaurant by ensuring the highest quality products and services are offered at all times. Responsibilities must be performed in accordance with all Company standards, policies, and procedures.
Essential Functions:
1. Practice, support, and promote Thunder Valley Casino Resort’s “ELITE” company-wide service mission and demonstrate AAA Four Diamond service standards at all times.
2. Contribute toward restaurant profitability by seeking opportunities to increase sales, manage appropriate inventory, control labor, and actively manage the cost of goods.
3. Ensure the proper inventory of materials and supplies are ordered and stocked. Effectively communicate new best practices, enhanced service standards, menu items, and product information to Team Members.
4. Organize work throughout the restaurant in a manner that facilitates efficient Guest service and profitable operations.
5. Work during various meal periods and hours of operation for the restaurant.
6. Ensure the appearance of equipment and Guest areas of the restaurant are maintained in an attractive, safe, and consistent manner.
7. Support all brand related initiatives in the Steakhouse. Foster regular contact with Marketing and other Guest-interacting departments.
8. Be aware of any special events and holidays and adjust forecasts accordingly.
9. Ensure that all Guests feel welcome and are provided the highest level of responsiveness that exceeds their expectations.
10. Assist in assigning work hours, scheduling vacations, and coordinating days off.
11. Post and award shift bids as they come available. Ensure proper staffing levels are maintained.
12. Ensure that all food and beverage products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking, and serving standards.
13. Prepare pre-shift information including a station diagram for servers, breaker sheets, and daily requisition forms. Ensure that Team Members are compliant with Thunder Valley’s required training.
14. Oversee and ensure that restaurant policies on Team Member performance appraisals are completed and the process followed through on a timely basis.
15. Hold individual Team Members accountable for performance of job duties, tasks, policies, and procedures.
16. Ensure the restaurant is in pristine condition at all times. Ensure maintenance schedules are followed by partnering with the appropriate department(s).
17. Be assertive in submitting work orders to the Engineering department through the appropriate applications guaranteeing the most immaculate appearance of the Steakhouse.
18. Document attendance, discipline, incidents, schedules, meeting notes, reports and any other related materials in a timely manner using the appropriate forms provided.
19. Ensure all company policies and restaurant operating standards are communicated effectively and followed in a consistent manner.
20. Practice and observe safety rules and regulations, and encourage others to do so. Comply with Board of Health Standards and ensure cleanliness of all restaurant areas.
21. Responsible for maintaining the Hazard Communication Standard for your area.
Minimum Qualifications:
1. Three (3) years experience leading a high-volume, upscale restaurant concept.
2. Advanced wine knowledge preferred.
3. Formal business education or restaurant management degree a plus. High school diploma or equivalent required.
4. Ability to communicate effectively with Guests, Team Members, and Management in both written and verbal form.
5. Must possess time management skills with the ability to delegate, empower and evaluate management and hourly Team Members.
6. Ability to work in a professional and fast-paced environment.
7. Must be proficient in computer applications including Microsoft Word, Excel, PowerPoint, Outlook, and point-of-sale software. Understand basic functions with ordering and requisitioning software.
8. Must be certified and maintain a current California state approved Responsible Beverage Service (RBS) certificate.
9. Must be certified and maintain a current ServSafe Food Handlers certificate.
10. Must possess advanced knowledge of food and safety regulations.
11. Ability to work a flexible schedule including weekends, nights, and holidays.
12. Must be at least 21 years of age.
13. Must be able to obtain UAIC Tribal Gaming License.
Physical Requirements:
1. Requires normal, corrective vision range, the ability to see color and the ability to distinguish letters, numbers, and symbols.
2. Requires walking, reaching, turning, bending, lifting, carrying, observing, hearing, sitting.
3. Manual dexterity to operate job related equipment.
