The Pem at Conrad London St. James is entering an exciting new phase, redefining its identity as a destination for elevated, contemporary social fine dining inspired by refined South Asian influences. Under the strategic guidance of a renowned consultant chef, we are seeking a Head Chef who will lead the kitchen into this next chapter, bringing creativity, precision, and strong leadership to deliver an exceptional culinary experience.

What will I be doing?
As Head Chef, you will be responsible for the overall leadership and direction of the kitchen, driving both operational excellence and culinary innovation. You will:
- Lead all aspects of the kitchen operation, including food quality, service delivery, and team performance
- Translate strategic culinary direction into a consistent, high-quality guest experience
- Inspire and develop a high-performing brigade, fostering a culture of excellence, accountability, and collaboration
- Manage resources effectively to meet business demands while maintaining the highest standards of preparation and presentation
- Ensure full compliance with food safety, hygiene, and legislative requirements
- Control costs and deliver against financial targets without compromising quality
- Build strong relationships across the hotel operation to ensure seamless service delivery
- Drive continuous improvement through feedback, innovation, and attention to detail
What are we looking for?
We are looking for a Head Chef who combines technical excellence with strong leadership capability and a forward-thinking mindset. The ideal candidate will demonstrate:
- Proven experience of 2-3 years as a Head Chef or Senior Sous Chef within a fine dining or luxury hospitality environment
- Exposure to elevated South Asian cuisine and a strong understanding of complex spices and flavour profiles
- A passion for innovation and the ability to evolve a culinary concept in line with strategic direction
- A positive, engaging leadership style that actively enhances the team culture, promoting collaboration, respect, and a consistently high-performance environment
- Strong communication, and team development skills
- A commitment to delivering exceptional guest experiences at every touchpoint
- The ability to perform under pressure while maintaining attention to detail
- Solid commercial acumen, with experience managing costs and driving profitability
- Relevant food hygiene qualifications and a strong understanding of compliance standards
