Created by James Beard Award-winning Chef Kelly Whitaker and the team behind The Wolf's Tailor, SHEEP is a limited three-month residency located on the rooftop of the Clayton Hotel & Members Club in Cherry Creek.
SHEEP is a fire-driven dining experience rooted in seasonality, craftsmanship, and hospitality. Centered around an open hearth and a four-course tasting menu with guest choice, the concept invites guests to explore ingredients, stories, and traditions through an immersive dining experience unlike any other in Denver.
We are seeking hospitality professionals who are passionate about food, beverage, and creating memorable guest experiences. This is a unique opportunity to work alongside one of the country's most celebrated culinary teams while helping launch one of Denver's most anticipated dining experiences.
Position Summary
Front of House Team Members are responsible for delivering warm, knowledgeable, and highly personalized service throughout the guest experience. Team members will act as storytellers and guides, educating guests on the menu, ingredients, culinary philosophy, and beverage offerings while maintaining the highest standards of hospitality and professionalism.
Successful candidates are curious, energetic, detail-oriented, and passionate about hospitality. Experience in chef-driven restaurants, tasting menu service, luxury hotels, private clubs, or elevated dining environments is preferred.
Key Responsibilities
Guest Experience
- Create memorable experiences through genuine hospitality and personalized service.
- Anticipate guest needs and respond proactively.
- Build meaningful connections with members, hotel guests, and local patrons.
- Deliver service that reflects the standards of both Clayton Hotel & Members Club and Id Est Hospitality.
- Maintain a welcoming and professional presence at all times.
Food & Beverage Knowledge
- Develop extensive knowledge of menu offerings, ingredients, preparation methods, and sourcing stories.
- Confidently explain tasting menu courses and beverage pairings.
- Answer guest questions regarding allergens, dietary restrictions, and menu modifications.
- Participate in daily pre-shift meetings and ongoing education programs.
Operational Excellence
- Follow all service standards, sequence of service, and reservation procedures.
- Maintain cleanliness and organization throughout the restaurant.
- Support teammates during service to ensure a seamless guest experience.
- Accurately enter orders, process payments, and complete side work assignments.
- Adhere to all health, safety, sanitation, and responsible alcohol service requirements.
Teamwork
- Foster a collaborative and positive work environment.
- Support cross-training and assist in multiple service positions as needed.
- Contribute to a culture of professionalism, accountability, and continuous improvement.
Required Capabilities
- Minimum 1 year of hospitality, restaurant, hotel, or private club experience.
- Ability to work evenings, weekends, and holidays.
- Strong communication and interpersonal skills.
- Ability to remain calm and professional in a fast-paced environment.
- Ability to stand and walk for extended periods.
- Ability to lift up to 30 pounds.
Preferred Capabilities
- Experience in fine dining, tasting menu, Michelin-recognized, or chef-driven restaurants.
- Wine, spirits, cocktail, or beer knowledge.
- Knowledge of OpenTable and modern POS systems.
- Previous experience in luxury hospitality or private clubs.
