Job Description

Palmetto Bluff is nestled along the May River in the Lowcountry of South Carolina between Hilton Head Island and Savannah. Job Summary: 

 

In conjunction with the Restaurant General Manager, the Assistant Manager will provide vision, direction and leadership in the overall operations of Cole’s Promote the Sea Island legacy of warm genuine hospitality while upholding and ensuring compliance with all company and departmental policies and procedures.

Essential Functions:


Job duties include; although are not limited to:

  • Actively participates in the restaurant operation providing continuous direction to team and ensuring maximum member/guest interaction.
  • Supervises and maintains service standards and adherence to company policies.
  • Familiarity with style of cuisine and service established for concept. 
  • Familiarity with food service practices and procedures.
  • Circulate on the outlet floor, continually checking with the guests and the service staff to ensure that everything is to the guests’ satisfaction.
  • Handle guests’ complaints and thank the guests upon departure.
  • Monitor, supervise set up and maintenance of dining room area to ensure that it is up to standard.
  • Control flow of room by seating guests in each section by rotation. 
  • Responsible for assigning and supervising all opening and/or closing side duties. 
  • Make entries into logbook. 
  • Participate in ongoing training of employees to ensure that employees continue to improve their performance. 
  • Recognize outstanding performance by service personnel and handle discipline as per standard operating procedures.
  • Communicate to all front of house team members all pertinent information including: special events, policies and guidelines, human resource topics, and other related topics.
  • Ensures equitable, timely, and complete opening and closing duties are accomplished.
  • Ensures shift-closing paperwork is timely, complete, and processed according to policy.
  • Ensures the facility, equipment and surrounding areas are well maintained and clean.
  • Continually provides member menu feedback to the Chef and Restaurant General Manager.
  • Maintains a daily log of operations including cover counts, staff levels, service issues and other relevant topic for future reference.
  • Daily and weekly ordering of all products necessary to conduct business.
  • Responsible for maintaining and operation within budget and by managing restaurants expenses. 
  • Responsible for effective labor management to be accomplished by proper scheduling that is in line with business levels and budget. 
  • Must possess a positive attitude and have the ability to work with a variety of people and in cooperation with coworkers efficiently and effectively
  • Must have ability to accurately handle money, make change, process credit card transactions.
  • Must be detail oriented and able to manage competing priorities and multiple deadlines in a fast paced environment
  • Proficient in Windows XP and Microsoft Office software applications such as: Word, Excel, and Outlook

Qualifications:

  • A minimum of 2-3 years’ previous experience in a related management position.
  • Strong management experience with high-end club or resort environment.
  • Previous Club or hospitality experience required.
  • Event, food and beverage, and recreation experience is very valuable.
  • Customer service oriented with ability to interact positively with people at all levels.
  • Demonstrated ability to lead and supervise.
  • Ability to train staff to suggestively sell menu items, beverages and wines.
  • Ability to think clearly and remain calm under pressure, making sound and logical decisions quickly. 
  • Excellent written and verbal communication skills, fluency in English.
  • Ability to work flexible hours to include nights, weekends and holidays.
  • All Palmetto Bluff employees who serve alcohol or who oversee employees who serve alcohol must obtain or hold a valid SC-approved Alcohol Server Training Certificate (company reimbursed). 

Physical Requirements:

  • Work tasks are performed both indoors and outdoors. 
  • Ability to stand and walk for up to 12 hours.
  • Must be able to lift 50lbs.
  • Must be able to exert well-paced ability to reach different outlets and other departments on a timely basis.
  • Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity.
