Job Description
The Lead Cook will help oversee back-of-house operations at Loft 94, supporting culinary leadership in executing high-volume food preparation and service with a focus on sushi and Japanese-inspired cuisine. In this hands-on role, you’ll assist with preparing and rolling sushi, sashimi, nigiri, and specialty rolls while maintaining exceptional food quality, presentation, and sanitation standards. You’ll also support training kitchen staff, coordinating kitchen operations, and ensuring compliance with all safety and food handling procedures. As the Lead Cook, you will demonstrate and exemplify Jamul Casino Resort’s mission and values by embodying the acronym F.I.R.S.T. (Fun, Integrity, Respect, Service, Team).
