JOB SUMMARY
Responsible for the overall cleanliness of kitchen areas as well as dishware, tableware, and other kitchen equipment. Maintains a clean dining area by clearing and cleaning (“bussing”).
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Cleans and sanitizes various areas including front of house, kitchen, floors, walk-ins, and kitchen appliances.
- Cleans, washes, and stores all dishware, silverware, and glasses by using the dishwasher according to industry standards every two (2) hours or more if needed.
- Follows 3-compartment sink procedures to properly wash and sanitize dishes.
- Practices all health & safety standards as set forth by company policies and government agencies.
- Uses all cleaning chemicals according to use.
- Empties all trash and cardboard boxes to the dumpsters.
- Reports any malfunctions of the dishwashing machine or other kitchen equipment, such as temperature errors, etc. to the supervisor.
- Racks, rinses, washes, and places plates in dish dolly quickly and efficiently.
- Removes bus tubs from cart upon arrival in dish area and replaces with clean tub for service.
- Removes silverware from pre-soak tub and runs through on flat tray; sorts in standing caddy and runs through dishwashing machine a second time.
- Washes all dishes, wipes down walls and dish area; cleans pots and pans sink prior to breaks and close of shift.
- Sweeps and mops floors, including under all tables and racks.
- Cleans and dries pots, pans, and serving utensils before being stored.
- Removes trash during shift as needed and at the end of each shift; includes cleaning and returning trashcans to dishwashing area. Checks trash cans continuously
- Busses the dining room tables, checks for cleanliness of the dining room and addresses cleanliness opportunities.
- May be asked to step on the line to assist the kitchen, expo, and/or serve.
- Puts away deliveries after they are received.
- Checks plates, glasses, and flatware to make sure they are clean before use.
- Breaks down dish machine, cleans, and reassembles.
- Promotes clean, safe, and neat environment for guests, self, and staff.
- Demonstrates knowledge of fire safety and other safety procedures.
- Performs other related duties as assigned.

REQUIRED SKILLS AND ABILITIES
- Excellent verbal and written communication skills.
- Ability to work quickly and efficiently in a fast-paced environment as part of a team.
- Knowledge of cleaning/sanitation standards and procedures.
- Ability to multitask.
EDUCATION AND EXPERIENCE
- High school diploma or equivalent.
- One (1) to three (3) months of food & beverage experience preferred but not required.
- Other combinations of education and experience may be considered.
- Must obtain and maintain ServSafe certificate.
- Must obtain and maintain a valid racing license.
PHYSICAL REQUIREMENTS & WORKING CONDITIONS
- The Team Member will be required to stand for the duration of the shift.
- While performing the duties of this job, the Team Member is frequently required to stand; walk; use hands to finger reach, handle, or feel objects, tools, or controls; reach, push, pull, lift with hands and arms; climb or balance; bend, twist, stoop, kneel, crouch, or crawl; and talk or hear.
- The Team Member may be required to lift or move up to 50 pounds.
- The Team Member may be exposed to hazards, such as cleaning chemicals.
- The Team Member is subject to endure heat and moisture, while immersing hands in water frequently.
- The Team Member may be required to work long hours, including nights, weekends, and holidays.
- The noise level in the work environment is usually moderate to loud.
- The work environment may vary in levels of crowds, noise, and exposure to secondhand smoke, depending on the assigned station and guest volume.
