Pastry Team Lead

Behind every great meal is a powerful engine—our Haymarket Commissary. We are looking for a Pastry Team Lead to be a core champion of our pastry department. If you are a technically precise baker who thrives on recipe consistency, loves managing multiple projects at once, and can confidently lead a team through a busy production day, we want you in our kitchen!
The Impact You’ll Make
You will play an integral role in the success of the bakeshop, driving three major outcomes:
- High-Quality Products: Ensure every pastry, dessert, and baked good is crafted beautifully and accurately.
- Menu Consistency: Keep daily production uniform in both quality and quantity across the board.
- Customer Satisfaction: Deliver a delightful, top-tier experience to every patron who visits our retail locations.
Core Responsibilities
- Production Scheduling: Lead daily production schedules in close partnership with the Commissary Production Manager.
- Quality Control: Monitor product freshness, ensure proper item rotation, and guarantee consistency across all finished goods.
- Compliance & Safety: Follow and enforce all established procedures, including health, sanitation, safe work practices, and Weights and Measures standards.
- Record Keeping: Maintain accurate, up-to-date inventory logs, temperature logs, and production records.
- Train & Delegate: Use your specialty expertise to teach recipes and production methods to team members, delegating tasks with clear, supportive follow-up.

- Fast-Paced Operator: You enjoy a dynamic environment and can seamlessly manage multiple simultaneous projects.
- Decisive Leader: You make quick, authoritative decisions in the kitchen, communicating with clear, task-based focus so your team knows exactly how to succeed.
Qualifications & Requirements
- Background: Minimum of 5 years of work experience in baking and pastry, including at least 1 year in a management or supervisory role.
- Product Knowledge: Thorough understanding of production, equipment, and ingredients for all bakery items.
- Education & Certifications: High school diploma or equivalent required (Associate’s degree in Baking and Pastry preferred). Active ServSafe certification is required.
- Physical & Tools: Ability to stand and walk for 8–10 hours, lift up to 50 lbs, and safely work with kitchen tools and machinery (including knives and electric pallet jacks).
- Schedule & Environment: Comfortable working a flexible schedule (nights, weekends, and holidays) and navigating varying temperatures, from deep freezers (<32°F) to hot kitchens (>90°F).
