Position Summary
The Commis Baker is responsible for assisting in the daily preparation, production, and presentation of fresh bakery products for the resort's breakfast operations. This role focuses on ensuring the timely availability of high-quality breads, rolls, pastries, viennoiseries, and breakfast bakery items that meet the luxury standards of the resort.
The Commis Baker works closely with the bakery and pastry team to maintain consistency, freshness, food safety, and operational excellence while contributing to an exceptional guest breakfast experience.
Key Responsibilities
Bakery Production
- Prepare and bake a variety of breads, rolls, breakfast pastries, croissants, Danish pastries, muffins, brioche, and other bakery products.
- Ensure all breakfast bakery items are prepared and available according to operational schedules.
- Assist in dough preparation, fermentation, shaping, proofing, baking, and finishing processes.
- Follow standardized recipes, production plans, and quality specifications.
- Monitor product quality throughout the baking process to ensure consistency and excellence.
Breakfast Operations
- Take ownership of the breakfast bakery production schedule and ensure all items are ready before service.
- Coordinate with the breakfast kitchen and pastry team to ensure smooth service operations.
- Maintain attractive and adequately stocked bakery displays throughout breakfast service.
- Prepare replenishment items as required during service periods.
- Support special breakfast events, VIP amenities, brunches, and themed buffets.
Quality Standards
- Ensure all bakery products meet the resort's luxury standards for taste, texture, appearance, and freshness.
- Monitor baking times, temperatures, and product presentation.
- Ensure products are displayed and stored according to established quality procedures.
- Report any quality concerns or equipment issues to supervisors promptly.
Hygiene & Food Safety
- Adhere to HACCP standards and all food safety regulations.
- Maintain a clean, organized, and safe bakery work environment.
- Practice proper food handling, labeling, storage, and stock rotation (FIFO).
- Ensure all bakery equipment and workstations are cleaned and maintained according to resort standards.
Inventory & Cost Control
- Assist in monitoring bakery ingredient levels for daily operations.
- Report shortages, damages, or quality issues of ingredients and supplies.
- Minimize food waste through proper planning and production control.
- Use ingredients and equipment responsibly to support cost-control objectives.
Teamwork & Communication
- Work collaboratively with pastry chefs, bakers, and other culinary team members.
- Communicate production requirements and operational needs effectively.
- Assist colleagues during busy periods and special events.
- Participate in daily kitchen briefings and training sessions.
Guest Experience
- Contribute to creating an exceptional breakfast experience through high-quality bakery products.
- Maintain professional grooming and conduct in line with luxury hospitality standards.
- Support guest interactions and live bakery presentations when required.
- Demonstrate a passion for craftsmanship and guest satisfaction.
Qualifications & Experience
Essential
- Certificate, Diploma, or Professional Qualification in Bakery, Pastry, Culinary Arts, or related field.
- Minimum 1 year of experience in a bakery, hotel, resort, or commercial baking environment.
- Basic knowledge of bread making, fermentation, baking techniques, and breakfast bakery production.
- Understanding of food safety and hygiene standards.
Preferred
- Previous experience in a luxury hotel or resort environment.
- Experience with artisan breads, sourdough, and international breakfast bakery products.
- HACCP or Food Safety certification.
Knowledge, Skills & Competencies
Technical Skills
- Knowledge of bread and viennoiserie production.
- Understanding of dough handling, fermentation, proofing, and baking techniques.
- Ability to operate bakery equipment safely and efficiently.
- Ability to follow recipes, production schedules, and quality standards accurately.
