Job Description
The Director of Food & Beverage is responsible for the strategic leadership, operational excellence, financial performance, and guest experience of all food and beverage operations throughout the resort. This role oversees multiple outlets, banquet operations, bars, pool operations, to-go and culinary partnerships while ensuring alignment with brand standards, service culture, and profitability goals.
The Director of Food & Beverage leads and develops department leaders and colleagues to create exceptional guest experiences, drive revenue growth, maintain labor and cost controls, and foster a high-performing culture across all outlets.
Essential Functions
Operational Leadership
- Direct and oversee daily operations for all food and beverage outlets, including restaurants, bars, lounges, banquet operations, pool service, and in-room dining.
- Ensure consistent execution of resort and brand service standards across all outlets.
- Partner with Culinary leadership to maintain high-quality food presentation, menu execution, sanitation, and service excellence.
- Monitor outlet performance and guest satisfaction metrics to identify operational improvements and opportunities.
- Ensure proper staffing levels are maintained based on business demand and seasonal fluctuations.
- Lead resort-wide food and beverage initiatives, promotions, activations, and special events.
- Maintain strong visibility throughout outlets during peak periods, weekends, holidays, and resort events.
Financial Management
- Develop and manage annual operating budgets, forecasts, and capital plans for all food and beverage areas.
- Analyze financial performance including revenue, labor costs, food cost, beverage cost, and productivity metrics.
- Drive profitability through strategic planning, menu engineering, pricing analysis, and operational efficiencies.
- Monitor payroll and scheduling practices to ensure labor goals are achieved while maintaining service standards.
- Collaborate with Purchasing and Culinary teams on inventory controls, product sourcing, and vendor relationships.
- Ensure compliance with cash handling, inventory management, and financial control procedures.
Leadership & Team Development
- Lead, mentor, and develop outlet managers, assistant managers, and department leaders.
- Foster a culture of accountability, engagement, collaboration, and service excellence.
- Conduct performance evaluations, coaching conversations, disciplinary actions, and succession planning.
- Support recruitment, onboarding, training, and retention initiatives for all food and beverage departments.
- Partner closely with Human Resources on colleague relations, staffing strategies, and compliance matters.
- Promote a positive work environment that supports diversity, inclusion, and colleague development.
Guest Experience
- Ensure all guests receive exceptional service experiences consistent with luxury resort expectations.
- Address guest concerns and service recovery situations promptly and professionally.
- Monitor guest feedback platforms, surveys, and social reviews to identify trends and opportunities.
- Create innovative dining experiences that enhance overall resort positioning and guest satisfaction.
Compliance & Safety
- Ensure compliance with all federal, state, and local health, sanitation, alcohol service, and labor regulations.
- Maintain food safety standards and ensure all outlets pass inspections successfully.
- Ensure proper training and compliance related to responsible alcohol service.
- Maintain a safe work environment and support workers’ compensation and accident prevention initiatives.
- Ensure adherence to company policies, SOPs, and brand standards.

- 6 years or more of progressive hotel Food and Beverage experience (typically with Hyatt)
- With opening hotels, previous hotel pre-opening experience preferred
- Service oriented style with professional presentations skills
- At least 5 years' experience in a senior role in a food and beverage environment
- Proven leadership skills
- Hotel/Hospitality degree an asset
- Must possess the following strengths: high energy, entrepreneurial spirit, motivational leader, proven track record in high volume concept, effective communicator, effective in providing exceptional customer service and ability to improve the bottom line
- Clear concise written and verbal communication skills in English
- Must be proficient in Microsoft Word and Excel
- Must have excellent organizational, interpersonal and administrative skills
- Experience implementing new F&B concepts
